Enne Badanekai (Odia:Baigana kasaa, Hindi: Baingan ka Salan)


Ingredients
  1. 4 to 6 small eggplants
  2. 2 Onions medium size (Chopped)
  3. Ground nuts (peanuts) or cashew nuts - 1/2 cup
  4. Sesame seeds - 1tsp
  5. Garlic - 5 to 6 pieces
  6. Cumin seed - 1/2 tsp 
  7. Coriander seeds - 1 tsp
  8. Grated coconut - 1/2 to 3/4 cup
  9. Red chillies - 3 to 4
  10. Turmeric - 1/4 tsp
  11. Tamarind - one marble size
  12. Salt to taste
  13. 1/2 cup of oil or as required
  14. Coriander leaves

How to Prepare

Add tamarind in 1/2 cup of water and extract the juice. Keep it aside.



Heat oil in a pan. Add sesame seeds, crushed garlic, red chillies, cumin seeds, coriander seeds, peanuts (cashew nuts) and fry for 2-3 mins

Add fried contents, tamarind extract, salt & grated coconut and grind it till it becomes smooth paste. Now Masala is prepared.



Wash and Make 4 slits on the eggplants keeping the stems intact.


Stuff the masala into the eggplants and keep aside.




In a thick bottom vessel/pan add 3 to 4 tsp oil. Add Onion, turmeric and salt. Fry till onion turns golden brown.


Add stuffed eggplants and remaining masala to the pan.


Add water and salt as required. Stir well and cover the lid. Keep it in low flame and cook till the eggplants become tender.



Garnish it with coriander leaves and serve it hot with rice or roti.

Dahi Baigana (a culinary meeting of eggplant and curd)

Ingredients
  1. 2 Brinjals/eggplants or 4 small eggplants (cut into 2" long pieces)
  2. 1 and 1/2 cup curds (beaten)
  3. 1/2 tsp each Cumin and mustard (Jeera and Sorisha)
  4. 6-8 curry leaves
  5. 4 green chillies (cut into 1" pieces)
  6. Salt to taste
  7. 1 tbsp. oil

How to Prepare

  1. Beat the curds with some salt and set aside. 
  2. Heat oil in a pan and splutter the cumin and mustard and add the curry leaves. Stir in the curry leaves.
  3. Saute' the cut eggplant pieces with a little salt till the eggplants are fried well and the raw look and smell goes away.
  4. Add the cooked eggplants to curds, garnish with little bit of chopped green chillies and enjoy with rice :-).

Badi (Badhi) Chura


About Badi


       Badi is the dried version of white lentil batter and is usually made up of white lentil (with peel its called black gram/Urad/Udad) and stored away for years. It comes in handy as a quick side dish when you have to put a meal together in a jiffy. Please have a look at below pictures with badis on a plate, dried under sun. These are small in size.




Ingredients

  1. Few Badis
  2. 3 teaspoonful Oil for frying the badis
  3. Small onion chopped
  4. 1 green chilli chopped
  5. A couple of crushed garlic
  6. Salt


How To

  1. Heat oil in a pan and shallow fry the badis and keep aside.
  2. Mix Onion, Garlic, Chilli and salt to it and crush it in a Grinder
  3. Serve it with rice. Add salt if required.
  4. The crunch of the badi with the smell of garlic and onion is therapeutic.

Plain Cauliflower fry

Ingredients:
  1. A medium size cauliflower
  2. Onion - 1 Medium size
  3. Green chilli - 1 (Or Red dry chilli - 1 )
  4. Mustard - 1 tablespoon
  5. Jeera - 1/2 tablespoon
  6. Mustard Oil - 3 tablespoon or as required
  7. salt - as required per taste
  8. Turmeric Powder

Steps to Prepare:

  1. Chop cauliflower into small pieces and wash it properly
  2. Chop onion into narrow pieces
  3. Keep the bowl on Gas Stove and pour oil. Keep it for 2-3 mins till it gets hot.
  4. Put Mustard, Jeera and chilli and fry it for 2-3 mins.
  5. Put Onion into it and fry for 5-6 mins.
  6. Put cauliflower pieces, add salt and turmeric powder as required.
  7. Mix it well, cover it and leave it with low flame for few mins.
  8. Check whether the cauliflower gets boiled or not, If required add lil water for boiling well.
  9. Once it boiled more than half, increase flame and stir it well for 5-10 mins.
  10. Turn off the Stove and Cover it and keep for few mins and then serve.
